Create mock utility services for connecting to ElasticSearch and functions to add them as routes in the base express server.

need rest post routes for:
submit new entry
submit like
submit coder like
fetch current entries by keyword, wildcard (*), etc

Switching to Mongo because it is lower barrier to entry and Nick set up a server.
