Updates the documentation to reflect additional EROFS adoption/use cases and to acknowledge a new contributing organization.
Changes:
- Update the “Applications” section to point to current Kata Containers docs and add nerdbox as a container runtime use case.
- Add an “Agent Sandboxes” subsection with Cube Sandbox and openEuler Conch references.
- Add Nvidia to the vendor contributors list.
