chore(charts): list chronicleprotocol as the only chart maintainer [sc-20934]

Removes the individual maintainer (WesleyCharlesBlake) from every chart in this repo so only the chronicleprotocol org is listed. Story: https://app.shortcut.com/chronicle-labs/story/20934

What changed

• charts/*/Chart.yaml (20 charts): maintainer entry removed. base, ethereum, mantle and zksync had no other maintainer, so they now list chronicleprotocol (https://github.com/chronicleprotocol).
• Each chart is patch-bumped (validator 0.8.0 -> 0.8.1, etc.). Artifact Hub shows the metadata of the latest version, so the change only becomes public once chart-releaser publishes new versions.
• README.md: only the version badge and maintainers table rows changed. helm-docs was not run blindly, because it would also drop hand-written value descriptions in arbitrum, nethermind, zksync and erpc.
• Templates are unchanged. Rendered output differs only in the helm.sh/chart label (plus hyperliquid's katenary chart-version annotation and ethereum-metrics-exporter's config checksums, which hash that label).

Merge notes

• Merge this PR on its own and hold other merges to main until its Release Charts run finishes. Concurrent release runs in June left beacons-0.0.17, nethermind-0.0.14, sith-exporters-0.2.5 and zksync-0.1.1 released but missing from index.yaml.
• lint-test will be red for reasons already on main: beacons, hyperliquid, spire and zksync Chart.yaml and beacons, hyperliquid, zksync values.yaml have no trailing newline. lint-test is not a required check.
• Upgrading to the new versions rolls pods only for safe-watcher, sith-exporters and ethereum-metrics-exporter (chart label in the pod template or checksums). app-of-apps pins versions, so nothing moves until someone bumps a pin.
• The Artifact Hub repository owner lives in artifacthub-repo.yml on gh-pages and is fixed in a separate PR against that branch.

Testing

• git grep -niE 'wesley|blake': 40 hits before, 0 after.
• helm template at origin/main vs this branch for all 20 charts, default and ci/*.yaml values (35 render pairs): identical apart from the chart version label.
• ct list-changed: exactly the 20 charts. ct lint: version bump, schema, maintainer and helm lint checks pass; the only failures are the pre-existing EOF newline errors above.
• Required chronicle image pin gate logic run locally: pass.
