chore(deps): resolve remaining dependabot alerts via pnpm overrides - #139

Second wave of overrides for transitive vulnerabilities flagged in the GitHub Dependabot dashboard (ajv, body-parser, decode-uri-component, fast-xml-parser, qs, uuid x2, valibot, yaml). pnpm audit: 44 -> 5 findings; the remaining 5 (image-size x4, @stablelib/ed25519) have no patched upstream release.
