Regenerate uv.lock for dynamic version (based on #458)

Summary

• Based on @psobot's work in Make version.py the single source of truth for version. #458 which makes version.py the single source of truth for the package version
• Regenerates uv.lock to reflect the static-to-dynamic version change in pyproject.toml, fixing the CI failure in Make version.py the single source of truth for version. #458

Context

PR #458 changes the version field in pyproject.toml from static (version = "0.9.22") to dynamic (dynamic = ["version"]), sourcing the version from pedalboard/version.py via scikit_build_core.metadata.regex. This requires uv.lock to be regenerated to stay in sync.

Test plan

• CI passes with the updated uv.lock

Closing in favor of #502, which includes the version.py single-source change, updates uv.lock, and removes the remaining legacy build files. This avoids two overlapping build-system PRs.
