Docs: the built-in plugin counts match the registry, and the sampler is no longer listed as missing - #1023
The plugin registry (REGISTRY in crates/dsp/src/plugins/mod.rs) holds 25 processors and 3 instruments (subtractive_synth, drum_synth, sampler), and docs/plugin-parity.md already says 25 + 3. Three other progress docs still gave the old counts (26 processors and 2 instruments in gaps.md and target-app-parity.md, 26 built-in processors in roadmap.md), and still listed the Sampler, which merged in #108, as missing or as an open pull request.
docs/gaps.md: G-08 says 25 processors + 3 instruments; G-20 and its index row no longer list a sampler.
docs/target-app-parity.md: the Built-in plugins row says 25 processors + 3 instruments, and the MIDI and instruments row names the instruments that are missing (piano, organ, wavetable) in place of "Sampler PR Add a built-in Sampler instrument #108 open". The code snapshot at 3bc2d92 now says 24 built-in processors and 2 instruments, which git show 3bc2d92:crates/dsp/src/plugins/mod.rs lists.
docs/roadmap.md: the alpha-gate Mix row says 25 built-in processors, and the beta plan's plugin essentials no longer list a sampler.
Each doc's Last updated line and revision history record the change. Percentages and hour estimates are unchanged.
docs/plugin-parity.md's Instruments row still lists the Sampler as missing; open #1019 corrects that row, so this pull request leaves it alone.
Open #687 and #533 also change the alpha-gate Mix row of docs/roadmap.md and keep "26 built-in processors", so each conflicts with this pull request on that one line.

Summary by CodeRabbit
Documentation
Updated product status documentation to reflect the sampler as shipped.
Revised built-in plugin counts across the roadmap and parity materials.
Updated review dates and revision histories; parity documentation notes that the reported percentages are unchanged.
…is no longer listed as missing
The plugin registry in crates/dsp/src/plugins/mod.rs holds 25 processors
and 3 instruments, as docs/plugin-parity.md already says, but gaps.md
and target-app-parity.md still said 26 processors and 2 instruments,
and roadmap.md said 26 built-in processors. At 3bc2d92 the registry
held 24 processors and 2 instruments, so the code snapshot in
target-app-parity.md now gives those counts.
The Sampler merged in storytold#108, but G-20, the beta plan's plugin essentials
and the MIDI and instruments row still listed it as missing or as an
open pull request.
The updated documentation records 25 built-in processors and 3 instruments on main, and removes the sampler from missing-capability lists. The parity document also records a code snapshot with 24 processors and 2 instruments.
