feat(kalico): support the multiple-probe registry

Reason / issue reference

KalicoCrew/kalico#972 moves native probe discovery to a central registry. Cartographer must join that registry to remain discoverable and coexist with other probes.

Functional changes

• Register cartographer on registry-capable Kalico: register_as_probe: true makes it default; false makes it named-only.
• Support named selection for PROBE, PROBE_ACCURACY, QUERY_PROBE, and Z_OFFSET_APPLY_PROBE, preserving other probes' handlers.
• Route bed meshing through the selected/default probe, retaining optimized Cartographer scanning and native/manual meshing. Reject invalid selections before movement.
• Restore discovery by native leveling and axis-twist calibration.

Decisions and callouts

• Capability detection is Kalico-only. Legacy Kalico behavior and existing Klipper/SimpleAF paths are preserved; their adapter implementations are untouched.
• Existing virtual-endstop names and homing behavior are unchanged.
• Native CALIBRATE_Z, PROBE_Z_ACCURACY, and nozzle cleanup cannot use Cartographer; unsupported uses fail explicitly before motion. Stock PROBE_CALIBRATE is not implemented; use Cartographer's calibration commands.

Manual testing

• On registry-capable Kalico, confirm LIST_PROBES marks Cartographer as default and bare QUERY_PROBE targets it.
• Configure Cartographer as named-only alongside another default probe; confirm QUERY_PROBE PROBE=cartographer and bare QUERY_PROBE target the intended devices.
• On a calibrated, homed test printer, verify selected-probe scan/automatic meshing; confirm unknown selectors and METHOD=scan with another probe fail without movement.
