Pin Gentle AI v3.6.1 for gentle-pi 3.6.0

Problem or opportunity

Gentle Shell's main already prepares gentle-pi 3.6.0 but pins Gentle AI v3.6.0. Gentle AI v3.6.1 is stable and contains the Pi tool retirement, OpenCode diagnostic, and ODD routing fixes. Publishing gentle-pi 3.6.0 with the older pin would omit those fixes.

Proposed outcome

Pin the published Gentle AI v3.6.1 release across installer hashes, Windows Sum, runtime capability contracts if changed, generated module, tests, and docs. Verify the packed runner against published assets, then publish gentle-pi v3.6.0 through GitHub Actions.

Alternatives considered

Publish the prepared 3.6.0 pin first and follow with 3.6.1, or skip 3.6.0. A single 3.6.0 release with the updated pin avoids both an extra release and a skipped version.
